Sweet and Sour Sardines

The "Sardèe in Saòr", or more simply “Saòr" is a Lagoon dish. The sardines are fried and left to macerate in oil, finely sliced onion, salt and vinegar. It is a delicate, yet flavoursome dish, an authentic invention of the poor fishermen who, in the past, partially fried and preserved the sardines that they did not sell in oil.
