Spaghetti with cuttlefish ink

"Pasta al nero di seppia" is a local speciality that uses squid ink for its aromatic quality and in order to colour the dish. The ink contained in the cuttlefish sac not only protects the mollusc by confusing its predators, but also gives the pasta its distinctive taste.
